It’s fall, which means it’s officially soup season, so kick it off with this delicious, Panera copy-cat broccoli cheddar soup! It’s great for dinner and it warms up well if you have leftovers. Check out the recipe below!
Broccoli Cheddar Soup:
- Dice half an onion, set it aside.
- Dice five cloves of garlic, set it aside.
- Shred three carrots (or use a bag of pre-shredded matchstick carrots).
- Chop three cups of broccoli.
- In a soup pot, melt half a stick of butter, then add your onions and cook until fragrant over medium-high heat.
- Add the diced garlic.
- Add 2 tsp seasoned salt, 1 tsp garlic powder, and 1 tsp paprika.
- Add 4 tb of flour and stir.
- Add 2 cups of chicken stock, drop the heat, and cover for five minutes or until thick.
- Add broccoli, carrots, and 2 cups light/regular cream. Cover for 15 minutes.
- Add cheese (measure with your heart) and season to taste. Enjoy!
